Catering for six pretty best friends
Six pretty best friends have - as in the last four years - invited customers and partners to a spring party. This year we celebrated with 300 guests in the UMSPANNWERK ALEXANDERPLATZ. Our technology partner AMBION provided the right lighting mood and the perfect sound, PARTY RENT presented trendy furniture and STILGERECHT decorated in a nautical look.
The CATERING team of AXICA this year focused with the food concept on the sustainable economy. Half a year ago, chefs André Steuer and Wolfgang Keller contacted the farm of Mrs and Mr Bork to buy a beef. The decision fell on Freddy, a young bull who led a decidedly quiet life in the circle of his brothers on the meadow of the Bork family in Wandlitz.
At the age of 22 months Freddy was slaughtered. Our AXICA butcher Sven Wiesner professionally dissected the animal and the AXICA cooks offered filet, back and hip as sous vide cooked parts, which were carved in front of the guests. Short Rib and shoulder came fresh from the Beefer. The bovine breast was used as an insert at the Ramen Station. The Flying Service served burgers whose patty course included parts of Freddy.
As an alternative to beef, the AXICA chefs offered the "Hauptstadtbarsch" (capital perch): a fish that is grown on the grounds of the Malzfabrik (malt factory), in the middle of Berlin on the ECF Farm Berlin from an ecological point of view.
For dessert, regional vegetables served as a mousse, crème brûlée and muesli bars on the buffet (the sections of which had already made their big show with the appetizers as a smoked version).
The feedback from the guests was great and we are happy that the concept worked out well.
